Welcome to Sonoran Mushroom Company home of the BACON MUSHROOM.  We are a family owned and operated farm in Tucson, AZ that supplies local and regional restaurants and retailers with farm fresh gourmet specialty mushrooms grown year around and harvested twice daily.  We offer a variety of hard to find fresh picked oyster mushrooms for local customers and ship specialty dried mushrooms to customers outside of Southern Arizona.  We never use herbicides or pesticides and start with organic spawn and locally sourced substrate.  


Our naturally grown mushrooms are sought after by chefs, vegans and foodies all across the Old Pueblo and Southern Arizona.  Seasonal favorites include Pink Oyster (Pleurotus salmoneo stramineus), Italian Oyster (Pleurotus pulmonarius), Pohu Oyster (Pleurotus ostreatus), Gelone Oyster (Pleurotus ostreatus), Blue Oyster and Columbus Oyster (Pleurotus columbinus), Elm Oyster (Hypsizygus ulmarius), King Oyster, (Pleurotus eryngii) and White Oyster mushrooms (Pleurotus ostreatus). Family Owned Mushroom Farm

We're located in sunny Tucson, Arizona, in the heart of the Sonoran desert where every day is paradise.  The Sonoran Desert is an arid region covering nearly 100,000 square miles in southwestern Arizona, southeastern California and Sonora Mexico.  There are very few mushroom farms in Southern Arizona due to the excessive temperatures that reach as high as 120 degrees fahrenheit in the Summer.


Because we're local growers in one of the hottest parts of the country we've learned to deal with unique challenges when cultivating and growing specialty mushrooms in commercial quantities. Water and environmental controls are among these challenges and mastering high yield crops in this harsh environment has taken years of preparation, practice and state of the art technology.


Some of our oyster mushrooms do quite well in warmer weather while others prefer subterranean conditions with much higher levels of humidity.  We select genus of fungi that are best suited to deal with the higher temperatures of our area and we maintain precise climate controlled facilities, monitored around the clock to ensure optimal growing environments.  Our fruiting, cultivation and inoculation environments are carefully controlled for the correct balance of O2, CO2, humidity and temperature, each specific to the type of crop in production. Unlike random conditions in the wild, commercial mushroom farmers maintain sterile environments with stringent quality controls to ensure a predictable crops.


Mastering the harsh desert environment takes a pioneering spirit shared by most folks that call the Old Pueblo home.  Tucson has a proud heritage forged by independent ranchers and farmers that lives on today.  It can be experienced in our culture and in our communities where a mix of multicultural diversity adds flavor to our daily experiences and influences our fare.  It's because our eclectic heritage that we thrive and have earned the designated as a World City of Gastronomy by the United Nations Educational, Scientific and Cultural Organization (UNESCO). We start with locally sourced organic straw substrate and USDA Certifed Organic mushroom spawn and do not add fertilizers or chemicals when farming the world's best tasting and most healthy oyster mushrooms.  We believe that fungi can be a staple in food sustainability efforts and can improve health. We grow produce that we're proud to serve our family and stand behind every mushroom.  



Our staff is always training to ensure we follow good agricultural practices for farming mushrooms. We conduct regular internal audits to ensure that our staff understands the importance of our relationship with you, our customer. We're also always looking for new ways to innovate and improve our process to increase productionand deliver more great quality produce to local communities.  Safe, affordable food should be accessible in every city accross America and we believe that mushrooms can become a bigger part of urban aggriculture initiatives. 



Mushrooms have a limited shelf life but are able to store much longer when dehydrated and properly stored. Though most of our products are grown in the communities we serve and delivered fresh daily, we do offer a limited variety of dried and specialty smoked mushrooms upon request and by special order.  You can also dry and preserve mushrooms at home with with dehydrator. Just store in a cool dark place and reconstitute in warm water when your ready to use them.

We use no pesticides or herbicides

Mushrooms take on the flavors and toxins of their environment just like a sponge.  Foragers know that you never pick and eat fungi that's located near busy roads for this reason.  So why risk your health buying mushrooms commercially farmed and shipped from across the country? Unless the mushrooms you're eating are organically grown there's no way of knowing just what's in them.  Getting to know your community farmers and insisting on more locally sourced environmentally sustainable food alternatives reduces your risk of exposure to harmful chemicals and cuts down on carbon emissions generated by excess produce transportation.


Safe, all natural oyster mushrooms are rapidly gaining popularity around the world and they're expected to continue replacing common flavorless mushrooms typically found on the shelves of U.S. grocery stores.  As more consumers are learning just what's being sprayed on imported produce responsible grocers are adding organic vegetables and whole foods to their shelves.
